Eastern Mediterranean Dining

Watermans is a celebration of the flavours and traditions of the Eastern Mediterranean, built around the best of Australian produce.

At the centre of the kitchen is a wood-fired grill and oven, where seafood, meats and vegetables are cooked simply and with care. The menu draws on the vibrant cuisines of Greece, Cyprus, Turkey and Lebanon, with dishes that are generous and made to share — from warm hummus with green zhoug and pickled watermelon with raw tuna to whole roasted John Dory with chermoula and pomegranate-glazed lamb shoulder.

With harbour views and a space designed for long lunches and late evenings, Watermans is a place to gather, share a meal and celebrate the simple joy of good food.

Opening Summer 2025, seven days a week.
